We move our cattle seasonally to new pastures and practice rotational grazing during the growing season.
The land they graze on is USDA certified Organic and has been certified since 2007 through Oregon Tilth (Thunder Lightning Organics, LLC certificate number Z-06061-2008). Starting in 2015 the meat we offer will be USDA Certified Organic as well. Whether the beef is certified organic or not certified we abide by the USDA Organic standards for raising our cattle. The USDA Organic standards prohibit antibiotics, hormones, herbicides and pesticides.
No added hormones, No herbicides/pesticides, No GMO, No anabolic steroids or sub-therapeutic feed antibiotics have been applied/fed to the animals ever!
Scottish Highland cattle do not have a physiological need to accumulate exterior body fat for warmth due to their extremely long and dense hair that this breed has evolved with. Think of a Scottish Highland Cow as a lean body builder with an oversized fur coat. You just don’t need the fat to stay warm. In addition to being naturally lean, our Artisan Butcher trims off all excess fat making less work for you when you go to prepare you favorite meal. The Scottish Highland cow stores it’s fat reserves intracellular, meaning the fat is located inside each of its cells. This fat content inside the cell walls explodes with flavor when cooked slowly over low heat.
